4th of July Cookout

We had a great family cookout for Cooking Club this month. The O'Haras brought their bouncy castle and the kids had a blast! The guys grilled and it was nice to get together with everyone's families. If you weren't able to join us, come to our meeting next month on Tuesday, August 3rd at 6:30pm. As requested at the cookout, the theme for that meeting will be vegetables. Bring something prepared with your favorite veggies :-) Desserts too!! We hope everyone can make it.

American Flag Cake

Calico Baked Beans

1 can green beans
1 can lima beans
1 can kidney beans
1 large can Bush's Baked Beans
1 can black beans
1 Tbsp. dry mustard
1 Tbsp. Worcestershire Sauce
3 Tbsp. vinegar
1/4 tsp. garlic powder
1/2 c. brown sugar
1 onion, diced
8-10 slices of bacon, fried and chopped

Drain all beans except for Bush's Beans.
Mix together mustard, Worcestershire Sauce, garlic powder, vinegar and brown sugar. Add to beans. Add bacon and onions.
Bake in oven until hot and bubbly at 325 degrees.
*This recipe can also be cooked in microwave, slow cooker, or roaster.

Apple Salad

3 apples (I used red but you can use green if you like it more tart)
3 tablespoons mayonnaise
1/2 tablespoon sugar
1/3 teaspoon curry powder (you can add more if you like a stronger curry flavor)
2 tablespoons orange juice
1/4 cup raisins (you could use craisins too if you like)
Mix everything but the apples and raisins in a small bowl. Cut the apples into small piece, about 1/2" square. Combine the sauce, apples, and raisins in a bowl. Chill if you desire but can be served at room temperature.

Cream Cheese Brownies

4 (1 oz.) unsweetened chocolate baking squares
4 (1 oz.) semisweet chocolate baking squares
1/3 c. butter
2 (3 oz.) pkgs. cream cheese, softened
1/4 c. butter, softened
2 c. sugar, divided
6 large eggs, divided
1 tsp. vanilla extract
2 Tbsp. all-purpose flour
1 1/2 c. semisweet chocolate morsels, divided
2 tsp. vanilla extract
1 c. all-purpose flour
1 tsp. baking powder
1 tsp. salt

Microwave first 3 ingredients in a 1 qt. glass bowl at HIGH 2 minutes or until melted, stirring once. Cool and set aside.
Beat cream cheese and 1/4 cup butter at medium speed with an electric mixer until creamy; gradually add 1/2 cup sugar, beating well. Add 2 eggs, 1 at a time, beating until blended. Stir in 1 teaspoon vanilla. Fold in 2 Tablespoons flour and 1/2 cup chocolate morsels, set aside.
Beat remaining 4 eggs in a large bowl at medium speed. Gradually add remaining 1 1/2 cups sugar, beating well. Add melted chocolate mixture and 2 teaspoons vanilla. Beat mixture until well blended.
Combine 1 cup flour, baking powder and salt. Fold into chocolate batter until blended and stir in remaining 1 cup chocolate morsels.
Reserve 3 cups chocolate batter. Spread remaining batter evenly in a greased 13x9 in. pan. Pour cream cheese mixture over batter. Top with dropped spoonfuls of reserved 3 cups chocolate batter; swirl mixture with a knife.
Bake at 325 degrees for 40-45 minutes. Cool and cut brownies into squares. Yield: 1 1/2 dozen.
